Today’s Macrobiotic dish is
*Paella
*Vegetables soup
*Apple comport
I use dried Tofu and root vegetables for Paella. Root vegetables are burdock, carrot, dried daikon, onion and lotus root. I mixed chopped scallion after cooked Paella.
Ingredients for soup are pumpkin, cabbage, eringi mushroom, ginger, kombu and oatmeal. Taste with sea salt and soy sauce. You may add pepper if you like. But I added pepper to Paella. So I didn’t add this time.
Apple comport was very easy. Place Apple, sultana, pinch of sea salt and waster in sauce pan. Bring to boil and simmer. Add cinnamon powder for flavor. Add dissolved kuzu fro thicken.
*Kuzu is starch
Raw Fruit make your body cold. When you have fruit in winter, that’s better cook it. And kuzu is good for warming. Other starches, such like a potato starch, corn starch and tapioca starch are work for cooling.
