How to make fresh lotus tea
1 cup Lotus root (grated)
Water
Pinch of sea salt

1) Squeeze the lotus root by cheesecloth.
2) Lotus juice and equal amount of water
3) Bring to the boil, simmer for a few minutes. Tea will be thick and creamy.
4) Add the sea salt toward the end.
You may add ginger juice, end of cooking.
