Once you've gotten off the Isle of Destiny, you should hunt weak semi-profitable creatures like dwarves (located in kazordoon), trolls (all over Tibia) or if you have premium then try out the larva caves in the desert/pyramid city Ankrahmun. Low level paladins may want to go to the Goblin areas (edron if premium, between Carlin and Kazordoon if free account). Just do this until level 15.
At level 15 you may have enough economic stability and a few health/mana potions in reserve to hunt something harder. Knights at this level need to TRAIN their melee skills. Either find a very weak weapon and hit creatures on full-defense (must bleed them every 30 seconds or so to train), or find a sorcerer/druid friend above level 25 who will summon you a "training monster" which heals itself and you can hit for a long time while your skills go up.
Paladins need to hunt with spears and a shield at these levels, and their distance skill will go up fast.
All vocations should have the spells "light healing" and "antidote" by this level.
Paladins, trained knights, and magical vocations can now journey to perhaps the most profitable monster in all of Tibia: the Ghoul. One of the best ghoul caves is in the extreme west of the Kazordoon wilderness, west of all of the dwarves themselves. Ghouls can drop around 30 gold *each* if you're lucky that day, and even a life ring here and there. They have pretty soft armor so a knight can kill them on offensive mode quickly, and they're very slow walkers so other vocations can simply run and shoot.
Hunt these undead until level 20, and if you can, pick up viking helmets and sell them to a shop NPC (they sell for 66 gp each, so you can make several hundred extra by lugging these home after hunts even without pushing them in a "loot bag" other players can steal, especially on a knight which has lots of internal carrying capacity).
