And, as you mentioned, the Nexus 7 is thicker and heavier. Could Apple have done it? Maybe. I'm sure they'll do it eventually. But they certainly couldn't have done it without making the iPad Mini thicker and heavier, and it's possible that they didn't want to do that. My main point is simply that it's wrong to use the Nexus 7 as an example because it's really not even close to being the same.
Tim Cook already publicly apologized for the misdirected Apple Maps. And now he's made a timely $21 million apology to SBB for stealing their clock design. But so far he hasn't apologized for the class-uncompetitive iPad Mini.
Apple isn't striving for 100% of the market nor does it do niche products. If none of Apple's products suit you, that's too bad for you - you must be super picky. You could try emailing Apple with product suggestions.

Cargo pants aren't for everyone. I'd like a tablet advertised as being more portable to fit in all of my pockets, which the mini can't.

It would not barely any difference in wait to use the retina display. Heck the Nexus 7 and the Kindle Fire HD both have displays that are actually better than a retina display. And don't give me the argument that the Nexus 7 weighs more. That is simple. Google is going for a $200 price point.
The truth is Apple knew they could basically shrink the 2 year old technology of the iPad 2 and sell it for a price that was far too high and people would still buy it. If you bought an iPad Mini you have gotten screwed by Apple. In less than a year you will see an iPad Mini with the retina display for $329. The current iPad Mini will drop to $249 to $269. Regardless Apple will make a crap ton of money of both devices and they will both be way overpriced.
People are welcome to continue to pay way to much for any version of the iPad. Supply and demand economics says they must be worth that much because people don't mind paying way too much. However, I will stick with real cutting edge technology and buy a Samsung Galaxy Note 10.1. You can expect apple the match the technology in this Samsung tablet in about two years.
I find it so amusing when Apple haters go on a limb and whine about how profitable Apple is. No one talks about the satisfied Apple customers. Oh noes, Apple exploits their customer and forces people to buy their products.
