One of the things I truly appreciate about my kitchen is a big, big grill + fan oven. This grilled chicken is something I used to cook when I was in Japan and still do here in England. Back in Japan I used to use a fish grill so I had to cook several times for one occasion. Now my big oven enables to feed a big party in one go, and I love it. 



Ingredients (serves 4) 
10 Chicken drumsticks (or 15 Chicken wings) 
3 Garlic cloves
5-6 tbsp Balsamic vinegar 
4 tbsp Japanese Sake (or cooking rice wine/white wine)
4 tbsp Mirin (or 1tbsp runny honey melted in 2-3 tbsp water) 
Salt & Pepper

Direction 
1 Pierce chicken and rub grated garlic and freshly grounded salt & pepper 
2 Mix balsamic vinegar, Japanese Sake and Mirin in a frying pan and bring it to boil then remove from the heat. Rest it for about 5 mins
3 Soak chicken into balsamic vinegar mix and marinate at least 30 mins 
(* You also can put them in a freezer bag & freeze straight away. Defrost it, chicken is perfectly marinated!)  

Preheat the grill to 180-200C 

4 Put meat in and gill for 35-40 mins (turn them over occasionally)

Serve with fresh green salad dressed with freshly grounded salt & pepper, lemon juice and extra olive oil. Well, I have to confess- we do not use silver for this meal, use your fingers & lick them. You won't be able to resist.
