The Positive Psychologist talks about 'mindful colouring' as a way of focusing the mind and finding some stillness, a form of meditation if you will. 

 

"If anxiety is a type of inner chaos' (Grossman, 1981), it seems likely that a structured activity such as colouring a predetermined, complex design would help to organize that chaos."
