I let it knead for about five minutes with the hook, then set it on my warm oven to rise for about an hour or so. Many years ago I became fascinated with earth oven construction after reading a book called, “The Bread Ovens of Quebec” by Boily and Blanchette. This is not an easy book to find, but if you come upon it, then buy the book. Outside of Quebec City along the 350 year old "Old King's Highway" you can admire the beautiful old Normandy and Brittany homes on your way to Montmorency Falls. It's published by the National Museum of Canada. The four of us would watch the dough rise in anticipation of warm slices fresh from the oven slathered in butter. There you can stop off at Chez Marie's and have a slice of homemade bread straight from their bread ovens. If I recall it was slathered in maple butter. This bread really went to town on the second rise. Our two ovens, the first in New York, and the second in Maine, were inspired by reading The Bread Ovens of Quebec*, by Lise Boily and Jean-Francois Blanchette.
