RECIPE: Arabian Meat Stew & White rice (Mom's)
Hi, I am Mustuand I am, well, a blogger of no specific genre. I like cooking though. And today I want to show you how to make a special meat stew with white rice ."The ingredients"Main protein / dish ::Cow flank / loin meat chopped to desired pieces1 X cup White basmati riceSpices :1/2 tspn Oriental spices Mix1/4 tspn CumenSalt & Pepper as desire (1/4 tspn recommended)1/4 tspn Black lemon powder1 bar dried Cinnamon1 tspn Red chilli powdera tiny slice of ginger1/2 a cup Green corianderVeggies :1 X White onion1 X red onion4 X Green chilli pepper1 X small zucchini1 X small carrot1 X small potato1 X small tomato3 cloves of garlicGreen onion as desireSauces / additives300 ml Ragu (Tomato / onion / garlic mix)3 tspn Tomato paste3 tspn Lime juice1/4 tspn Vegetable oil500 ml Water"Preparation" :Marinate the meat chops in the Ragu and lime juice for 24 hours. Make sure it covers the meat with 50ml extra around it. NOTE : This is an extra step that I add myself and not in the original recipe. But it helps the meat give. more flavor and become juicy.Wash and Soak the white rice for 30 minutesDice the green chilli pepper + garlic + gingerChop tomatos to desire (4 slices recommended)Chop white oinion to small cubesDice green corianderChop the veggies (Carrot, potato, zucchini, green pepper) to desired sizes"Cooking":Pour 1 tspn vegetable oil on a pot.Add dices red onion to it.Add pinch of saltStart frying the onion tell it caramelizeAdd the diced garlic / ginger / green chilliCook for 30 secondsAdd chopped tomatosNOTE : If it seems like burning, add a small splash of water. The water in the vegetables usuall take care of it.Add the chopped meat and cook it for 3 to 5 minutes.Add chopped white onionAdd the spices ( Oriental, cumen, black pepper, black lemon and red chilli pepper )Mix and keep cooking for 2 minutes on low heat.Add the tomato paste. Keep mixingAdd the green coriander. Keep mixingBefore the mix dries. Add around 400 ml waterAdd the chopped veggiesNOTE : You can add the chopped veggies 15 minutes before serving if you desire a crunch to its biteClose the pot and keep it at simmering temperature For an hour.NOTE : If you like the stew to be thick, add less water, adjust the temperature and keep an eye on it less it get burned.Rice preparationAdd a dash of vegetable oil on a potAdd 300ml waterAdd soaked white basmati rice. Do not use the soaked water.Add the cinnamon barClose pot cover and let it cook till it get puffed and absorb all the moisture.When the rice read. You can fish out the cinnamon bar."Serving / Presentation"Pour the white rice on a flat wide platePour the stew in the middle of the rice.Arrange the meat chops to be in the middle. Yes, a baby, she would blend it, without the meat of course, and feed it to me though a "modified" baby bottle.
