次の英文を読み、下線部の語句の意味を文章から推測し、( )に入れるのに最も適当なものを①~④から1つ選べ。

What is the difference between fermentation and rot? In a wide sense, both of them mean the same chemical change of things. But when the process is desirable for human beings, we usually use the former and when undesirable, the latter. For example, when milk is left out of the refrigerator on a hot day, it turns sour soon. It smells bad and becomes unsuitable to drink. We say it's rotten. On the other hand, we know that milk can be made into yogurt under certain condition. In this case we don't say it's rotten because it tastes good.

In this passage, the meaning of fermantation is ( ).

① the natural process by which food changes into something useful for us

② the natural process by which food changes into something bad to drink or eat

③ the change of food that happens in the refrigerator

④ the change of food that happens on a hot day

 ①

fermentation は 「発酵」という意味です。動詞形は“fermentate”
