and seared toro tuna scented with spices
Potato gnocchi with wild pigeon ragout and black truffle
Striped red mullet, "Frascatelli" flavoured with lemon from "Sorrento"
wild arugula, Aglianico red wine reduction
Almond "Leuco fagon", candied apricot in lemon juice
fresh rose sorbet, baby lemon balm

Twice cooked Iberian pork chop scented
with fennel seeds and served with
trio of sauces: "Harissa", garlic emulsion, herbs pesto
Dark chocolate mousse, candied organic sour cherry,
"Le Peracciole Limoncello" liqueur sauce
Cocoa ravioli stuffed with pumpkin cream and cinnamon
on green apple puree and home-made Amaretti
