It's that time of the year again 🍰🍪🍩 #gbbo #bakeoff Fat & sugar-free matcha vegan cheesecake by the amazing @theveganphysio 💚💚💚 Recipe: For the crust: 250 pitted dates 60 rice puffs or oats For the White layer: 165 yogurt 80 soya milk 2 agar agar For the matcha layer: 330 yogurt 120 soya milk 4 agar agar 4 gr matcha tea Add rice puffs (or oats) to the food processor and process until ground. Then add the dates and blend until sticky. Press the crust mixture into a 18.5 diameter mould with baking paper and freeze for 2 hours. For the white layer: dissolve the agar agar flakes into a little bit of milk into a pan and boil until everything is dissolved. Let it cool and start adding the soya yogurt with a spoon. Then add stevia (or any other preferred sweetener). Add the filling on top of the crust and freeze for two hours. For the matcha layer: same procedure! Then add the matcha powder at the end! Add this filling on top of the white one and freeze for 2 hours. Cake is ready :) It wad decorated with vegan meringues, raspberries and chia and hemp seeds!
