I make 'hitsumabushi' often.
'Una-don' crowns wide fillets of baked eel on rice,
while they are cut in small pieces and cooked in rice when you make 'hitsumabushi'.
You sprinkle finely-chopped green onions, and add some wasabi(green horseradish paste),
which also differs from the way you eat 'una-don'.
