I first saw the menu at a sushi bar in Seattle fifteen years ago.
It was a very new idea for me to have avocado and cream cheese with Japanese rice and nori.
A Mexican friend of mine, then, taught me other versions, and it became one of my specialties.
Yesterday, Mom invited me for lunch and she was all done when I arrived.
She rolls it often and enjoys Japanese potluck party with her friends.
Recipe:
Cook three cups of rice (use Japanese cup for rice, that measures 180cc)
with a small cut of konbu and one-tablespoon of sake.
When it's done, remove the konbu, and add a third cup (normal cup) of vinegar,
three-tablespoon of sugar, and a bit less than a teaspoon of salt.
Try to cut the vinegar and others into the rice, so that you don't mash the grains.
Cool it down as you do it.
Cut avocado into wedges and squeeze lemon over.
Cut cream cheese and cucumber into strips.
Place a sheet of nori (reverse side up) on sunoko (if you don't have this tool for rolling norimaki,
just spread cooking-wrap), and evenly spread the rice.
Place all of the above prepared ingredients plus fake crab meet in a horizontal line
in the middle of the rice, and roll up from the bottom, pulling up the sunoko or the wrap gently,
and push the bottom line into the center of the roll.
Cutting the roll could be the most difficult part.
Here's the trick: each time you cut, wet the knife with vinegar.
Mexican version: try mayonnaise instead of cream cheese. sprinkle sesame on the rice.

簡単に作り方をご紹介します。
普通の海苔巻を作るようにすめしとのりを用意します。
巻くものは、くし型に切ったアボガドにレモンを振りかけたもの、キュウリとクリームチーズを細長く切ったもの、かにかまぼこ、の4種類です。
メキシカンの友達が、ご飯の上にゴマをふりかけ、クリームチーズの代わりにマヨネーズを使ったものを作ってくれましたが、これもなかなか美味しかったです。
