so...what is hojicha?????
Hojicha is the next matcha! It's a japanese roasted green tea with a nutty roasted and caramelised aroma with a golden brown colour. It's one of the most smoothest and easiest of green teas, so if you're a beginner of Japanese green teas, I'd suggest to start off with hojicha! Traditionally, it's enjoyed as an after dinner tea as it's 99% decaf!
Hojicha is made of the last autumn season's green tea, where the leaves and stems are high roasted to 180c where the tea is almost burnt. This gives us the roasted aroma. Hojicha is a loose leaf tea, however we have milled the tea leaves into powder form in order for people to be able to enjoy it in lattes or use it in desserts such as cakes, icecreams, affogatos etc. Usually, the milled hojicha is slightly more coarse and grainy on the palate, however we double our milling time in our manufacturing plant in order to make the tea as smooth and creamy as matcha. If you'd like to try hojicha, many of our client's cafes across Sydney and Melbourne sell them as hojicha lattes. We are also selling them at Osaka Trading, Tramsheds, Sydney Sunday Market where we were this weekend! ほうじ茶は秋のお茶を強く火入れしたお茶のことなんです!もともとは食後に飲むお茶でしたが、最近は、カフェとかでも人気なほうじ茶ラテとして売れていまーす!香ばしくおいしいですよ!ほうじ茶を使って作った焼き菓子、アイスなどもシドニーやメルボルンのカフェとかでもとても人気です!
私たちはほうじ茶を楽しめるためにほうじ茶のリーフを粉の状態にしてきました。抹茶の粉くらいにスムーズに、舌にあとが残らないように、粉になるまでの時間を2倍にしたり、メッシュに何回も通したりして、美味しいお茶ができるためにこだわりをしていまーす!
