2 chicken breasts, cut into bite-size cubes
some fresh basil leaves
oil for frying
pepper salt
1 cup cornstarch
-Marinade-
4 pieces garlic
½ thumb ginger, peeled and grated
1 tablespoon light soy sauce
½ tablespoon mirin
¼ teaspoon five spice powder
¼ teaspoon ground white pepper
½ teaspoon salt
½ teaspoon sugar
1 tablespoon water

Miixed all of marinade in a big bowl. Put chicken cubes in and marinate for at least 20 mins.

Heat oil in a pot over medium heat for deep-flying. Coat the chicken cubes with the cornstarch evenly. Deep-fry the chicken until the exterior is crisp and golden brown, then you can remove from the oil and set aside to drain off excess oil on paper towels.

Turn the heat down to medium heat, and add in basil leaves. Fry the leaves until crisp, and remove from the oil and drain off excess oil on paper towel.

Add the pepper salt and basil leaves and toss well with the chicken cubes. Serve immediately.
