Soup (お雑煮)

1. Heat the broth.

2. Broil Mochi.

3. Put vegitables in serving boul.

4. Put Mochi after it broild.

5. Pour broth.

 

Vegitable (お煮しめ)

Ingredients (for 2 servings)

Chicken thigh meat 300g

taro 200g

carrot 100g

lotus root 120g

burdock root 50g

konnyaku 120g

shiitake mushroom 4 pieces

Silk peas 4 pieces of pea

Water (for soaking) As needed

Boiling liquid

water 400 ml

Light soy sauce 50ml

Mirin (sweet cooking sake) 50ml

 

Directions:

Preparation

Wash burdock root well. Cut off the stones from the shiitake mushrooms. Remove the stringiness from the peas and blanch them in boiling water.

1. Peel taro and cut into quarters. Cut carrot into pieces with the skin on.

2. Peel lotus root and cut into small pieces. Cut burdock root into thin diagonal slices.

3. Cut konnyaku into bite-sized pieces with a spoon. Cut off the stems of shiitake mushrooms and cut into quarters.

4. Cut chicken thighs into 3 cm cubes.

5. Boil water in a pot and add 1, 2, and 3. 1 to 2 minutes, then remove from the water and drain in a colander.

6. When the surface turns white, remove from the pot and rinse quickly under running water and drain.

7. Put 5 and the ingredients for the broth into another pot and cover with a lid. Simmer over medium heat for 15 to 20 minutes, skimming off any scum along the way.

8. When the vegetables are cooked, add 4 and simmer over medium heat for 2 to 3 minutes.

9. When chicken thighs are cooked, add peas and blend, then remove from heat.

10. Serve in a bowl.

Cooking tips and points

By cutting ingredients in different sizes, they can be cooked at the same time.

By marbling (boiling through) the ingredients, the taste will be clear and colorful without any scum.

Chicken will become tough if cooked longer than necessary, so please marble (boil through) the chicken and add it after the vegetables are cooked through.

Use a heavy-duty lid. A heatproof dish covered with aluminum foil can be used instead.

Boil them and take it out in basked keep in cool place.
