Look what I just made. I made diabetes marshmallow cupcakes.
I made white cake cupcakes. (It's a sweet cake recipe. It's called Marshmallow cake.) I topped the cupcakes with marshmallow icing and these homemade marshmallows I made a couple days ago.
I didn't plan to eat any tonight because I actually wanted to sleep, but one didn't fit in the box and I had to scarf it down like a mad woman
ahem... eat it. I kind of expected them to be disgustingly sweet and
inedible, but it all totally works together. They're actually really
good! ^-^
Excuse me while I go try to burn off this sugar-high/impending diabetic coma. Maybe I'll run around the room for a while...
I made some thin mints last night.
It is quite difficult to properly balance the mint and chocolate flavors, since they are two strong flavors. I got it right for the chocolate, but not quite for the cookies.
They were still quite tasty, but I'm not going to be putting the Girl Scouts out of business any time soon!
