I made some key lime pie cupcakes this week too.

I cheated and used boxed cake mix and canned frosting as bases, but I added lime juice to the cake mix and graham cracker crumbs into the frosting (a cool idea I picked up from a recipe I found online. It's supposed to imitate the pie crust)

They were very tasty and look nice too! (‐^▽^‐)
I had some extra pumpkin puree after I made the pumpkin pies, so I decided to find a use for it. (Especially since pumpkins are so expensive this year because a lot of the pumpkins got killed by this crazy weather we've been having this year! Plus the pumpkins were really fresh and tasty because my dad got them from a friend of his who is a farmer.)

I made some pumpkin spice pancakes. They were SO good. I want more. o(TωT )

I put some of the pumpkin syrup that I made with some of the puree on them. (I didn't take pictures of the syrup because it didn't look too good because of the spices floating in it)

During this whole week I've baked two pumpkin pies completely from scratch.

I started with two small pumpkins, cut them in half, scooped out the seeds and baked the pumkins in the oven to soften them.

I roasted the seeds and had a tasty snack for later too! (^O^)

After the pumpkins finally cooled I scooped the flesh out of them and made a puree in the food processor.

It doesn't look like much in the picture, but I ended up with two containers full of puree. I had more than enough puree to make the pie filling, so I got to make a lot of tasty pumpkin dishes later with the extra puree. ≧(´▽`)≦

I made a gingersnap crust for the pie. I had a hard time pressing the crust into the pie dish and it was a little uneven, but It tasted so good!

Then I made the filling, filled the pie, and baked it.

It doesn't look the best, but it tasted so good! The pumpkin pie I made later this week came out nicely too. (Even if it did have a crack in it ゛(`ヘ´#)) It was a lot of work to make homemade pumpkin pie, but it was so worth it. I will definitely make another one next time I get my hands on some more pumpkins. (Not the one we have now- it is NOT a sweet pumpkin.
