Do you enjoy eating #raw or #cooked #vegetables? Then you know that I am a very curious person, what is your absolute favorite #vegetable? Today I want to bring to your attention, my personal #recipe of Russian #salad with only #rawvegetables, so it is a very quick recipe to make and in my opinion much more #nutritious and #tasty than the version with cooked vegetables. How about? . The raw vegetables that I always eat in my #meals are #lettuce and #chicory. Often they are considered low-nutritious vegetables but they are not at all. Indeed they contain two very useful substances that make them unique! One of these is the lactucarium, a white, milky substance found within the leaves. This chemical helps you #relax and enhances your sleep quality. (https://www.naturalfoodseries.com/11-health-benefits-lettuce/) Lettuce opium (lactucarium) has been used for centuries in European and South Asia as an analgesic. Its effects were evaluated as comparable to ibuprofen in tests on mice. (https://www.ncbi.nlm.nih.gov/pmc/articles/PMC3709812/) . The other substances are the Sesquiterpenes lactones that however are widely present in numerous genera of the family Asteraceae (Compositae). The bitter taste of chicory is caused by sesquiterpene lactones. Sesquiterpenoids, and specifically sesquiterpene lactones from Asteraceae, are described as the active constituents used in traditional medicine for the treatment of various diseases. These compounds are synthesized by plants in several organs such as leaves, fruits or roots and they are a promising #antioxidant, #anticancer, and moderate antinociceptive agents - that inhibit the sensation of #pain!
