Today,i want to talk about my gourmet adventure😉

Do you know Japanese conger?
It's called "HAMO" in Japanese,and it's a traditional delicious food that represents summer in Kyoto.

HAMO is a kind of the eel, with a large mouth and many sharp teeth.
and a ferocious creature that is said to bite even if only it's head is cut off.

The taste is pale and there are various cooking methods such as fried, "tempura","sashimi(raw fish)","teriyaki" and so on.
Once upon a time, Kyoto was the capital of Japan.
And a lot of foods were brought to there.

But in the hot summer🥵, most of the fish died in transportation,and only the conger had a strong vitality and did not die.

However, this fish has lots of bone,so it's hard to eat it.
Then, a unique technique called "bone cutting" was created.  
This is a very difficult method, so conger has become a high-class fish.

If you want to eat it,you have to pay so much money!🤑

But since I came to Kyoto, I want to eat it.  With that in mind, I found a cheap conger on the market!  
It is skewered with a small fry.
Just 500yen😆

hmm...

oh, fish is fluffy and tender, and the fried batter is crispy.  It's a simple seasoning with only salt, but delicious💕


The next thing I found was "SOBA(japanese noodle) with HAMO and citrus". 
 Citrus adds a refreshing flavor to the deliciousness of noodle.
Unlike when fried, HAMO has a crunchy texture of bones and a elastic texture of skin.

hmm...so nice🤤

At that time, I noticed.

Japanese people love the word "期間限定(limited time)"
And we buy products that are sold with this magical word.

It may be because Japan is a country with four distinct seasons.


The most delicious time of many foods is very short, and if you miss that time, you won't be able to eat it until next year.

So,if you come to Kyoto and it's summer, please try eating "HAMO".
