The ramen I'm going to introduce today is the ramen in Aizuwakamatsu, my hometown, and the "Miso Kottori Ramen", which is the signature menu of "Tonchinkan".As you can see from the photo, the backfat is floating. However, the oil is not too heavy and you can feel the taste. The noodles are medium-thick curly noodles, and the soup is often entwined.
