Ingredients

For Marinated Chicken

● 5 oz boneless, skinless chicken

● 1 tsp toasted sesame oil

● 1 tbsp soy sauce

● 1 tsp rice bran or grapeseed oil

For Fried Rice

● ⅓ cup rice bran or grapeseed oil

● 2 cloves garlic

● 5 large red Asian shallots,

● 3 to 4 cups cooked white rice

● 2 tsp  shrimp paste

● 1 tbsp red serrano or cayenne chilies

● 2 tbsp soy sauce

Step By Step Instructions

Step 1

Take a small bowl and combine chicken with sesame oil, soy sauce, and oil. Mix well to coat the chicken. Let it marinate for 2 to 3 hours.

 

Step 2

Take a large wok or skillet and heat oil in it over medium-low heat. Add 3 shallots and stir fry until golden brown (approximately 5 to 10 minutes). Keep the oil in the skillet and transfer the shallots to a paper towel to drain.

 

Step 3

Stir fry chicken in the same skillet for 2 to 3 minutes on medium-high heat until it is cooked through. Then transfer the chicken to the plate and add 2 shallots and garlic to the skillet.

 

Step 4

Cook shallots for 30 seconds until the garlic starts to golden brown. Now add shrimp paste or oyster sauce and stir fry for 30 more seconds.

 

Step 5

Add rice to the skillet and increase the heat to high. Stir fry rice for 45 seconds to 1 minute. When shrimp paste/oyster sauce and oil are mixed with the rice, add soy sauce and stir fry for 1 minute. Add chilies and chicken to the skillet and fry for 1 more minute.

 

Step 6

Your Malaysian Fried Rice are ready. Remove them from the heat and serve with fried eggs, spring onions, prawn crackers, cucumber, tomato wedges, and lime wedges.
