Mexican and Korean fusion!
The scallions have peppery flavor that really packs a punch and tastes so delicious.
I'm glad that I gave this food a try because it was totally new to me! The taste was wonderful, but I have to admit it was a bit too heavy for my 8am breakfast ![]()
Chilaquiles Rojos
Tortilla chips cooked in their homemade salsa, topped with cotija cheese, and sour cream, and wrapped in a banana leaf. Includes 2 eggs any style (sunny side up) with rice, beans, and plantains.
Chilaquiles are traditional Mexican breakfast dishes.
I know it might look like a lot, but it can actually be a healthy option if you fry the tortilla chips with healthy oils and use a lean protein as a topping.
Just be careful with the peppers - depending on the batch, they can be pretty spicy!![]()
