今年初めて、おせち料理を作りました！
それでは、おせち料理の説明のいいサイトを見つけましたので、引用させていただきます。
おせち料理とは
Osechi-ryori are specially-prepared New Year's dishes to be eaten during the first three days of January. Most dishes are cooked in order to be preserved for at least three days so women don't have to cook during that period. Various kinds of beautifully-prepared dishes are set in four-tiered lacquer boxes.
（お節料理は正月三賀日に食べる特別の料理です。女性たちが三日間は炊事を休めるようにと、ほとんどのおせちが最低三日間は保つように作られています。様々な種類の料理が、美しく整えられ、四段重ねの重箱に入れられます。）

Each of the dishes has some auspicious meaning which reflects people's wishes. For example, kazunoko, herring roe, represents fertility, kuromame, cooked black beans, are for health (mame means healthy), and lobsters are for longevity because their bodies are bent like an old man's.
（食べ物には人々の願いがこもったおめでたい意味があります。例えば、ニシンの卵である数の子は子孫繁栄の意味を、黒豆は「まめになる」、つまり健康になるという意味を、海老は曲がった姿が老人のようにみえることから長寿を意味します。）

おせち料理は新年の特別な料理として準備され、重箱にきれいに並べられます。
Osechi ryori is specially prepared New Year’s food, beautifully arranged in lacquer boxes.
おせち料理のそれぞれの料理や材料には健康や豊作、幸福、繁栄、長生きなどの意味があります。
Each dish and ingredient in osechi has meanings, such as good health, good harvest, happiness, prosperity, long life, and so on.
数の子などの黄色の料理や材料は繁栄を意味し、様々な豆は健康への願いを暗示します。
It’s said that yellow colored dishes and ingredients such as kazunoko symbolize prosperity and that various beans imply a wish for good health.
また、赤･ピンクと白の料理、白とピンクのかまぼこのようなものは祝いの色を示します。
Also, red/pink and white colored food, such as pink and white kamaboko slices represent celebration colors.
それぞれの料理を英語で書くと
・昆布巻き simmered konbu rolls
・黒豆 simmered black soy beans
・栗きんとん mashed sweet potato with sweet chestnuts
・田作り（ごまめ）candied dried sardines
・数の子 salted herring roe
