This is the original type of Hakata noodle called "Shiro" : quite thin noodle in pig-bone broth. It's simple but very tasty, I like it the best.
We can choose the noodle type : quite thin, thin, normal or soft.
This is also original type called "Aka". Its soup is much thicker than "Shiro", mixed with sesame oil and chili miso ( fermented soybean paste ).
We must stand in line for several minites inside or outside of the restaurant, but it's worth waiting.
