Defrost the steak naturally first, then dry the steak
Add seasoning and marinade (order: 盬, sugar, light soy sauce, dark soy sauce, cornstarch)
Whisk the eggs first, then add the steak and mix well (the egg is what locks in the gravy and loosens the steak)
Marinate the meat for at least 2 hours, preferably overnight
First, heat the wok with oil over high heat. After the oil boils, turn to medium heat.
Add the steak and fry for 2-3 minutes on each side until golden brown
Cover the wok and bake for about 1-2 minutes
Add coriander and serve
