I live in Chiba Japan, have two daughters. Love to bake bread. Just started bread lesson last year. Please enjoy my blog and leave comments.

With just minimum ingredients you can make a soft, no crumb white loaf. I knead by hands until the dough reaches window pane stage.

What you need:

Bread flour 250g
Instant dry yeast 1.1/3 tsp
Sugar 1.1/2 tbs
Water 160-170cc
Salt 1/2 tsp
Unsalted butter 25g


Proofing time:
1st fermentation at 40 degrees celcius for 35-40 minutes.
Benchtime 10 minutes
2nd fermentation 25-30 minutes 

Bake at 190 degrees celcius for 25 minutes (can adjust depending on your oven)
