With just minimum ingredients you can make a soft, no crumb white loaf. I knead by hands until the dough reaches window pane stage.
What you need:
Bread flour 250g
Instant dry yeast 1.1/3 tsp
Sugar 1.1/2 tbs
Water 160-170cc
Salt 1/2 tsp
Unsalted butter 25g
Proofing time:
1st fermentation at 40 degrees celcius for 35-40 minutes.
Benchtime 10 minutes
2nd fermentation 25-30 minutes
Bake at 190 degrees celcius for 25 minutes (can adjust depending on your oven)
