A lot of seasonal good food gives us an appetite
in autumn. Matsutake mushrooms are the king
of autumn taste. Many Japanese like the aroma
and texture of matsutake mushrooms.
Matsutake mushrooms are native to Japan and
have been eaten since before Christ. It is said
to have appeared in Nihonshoki (the oldest
chronicles of Japan 720) and Manyoushu (Japan’s
oldest anthology of poems in 8th century).
The matsutake mushrooms, which have been
loved by the Japanese, are said to have come
to be prized as a luxury and valuable taste that
can only be eaten in autumn, because it is
difficult to grow them artificially and the harvest
has fallen year by year.
We enjoyed dishes full of matsutake mushrooms
in Nagano, which is famous for producing
matsutake mushrooms. We tasted the beauty
and deliciousness of autumn with our five senses.
食欲の秋。秋の味覚の王様といえば、松茸。松茸は
日本原産で、紀元前から食されていたそうだ。
日本書紀や万葉集にも登場しているという。
日本人に愛されてきた松茸は、人工栽培が難しく、
収穫高は年々下がり、そのため秋にしか食べること
のできない高級で貴重な味覚として珍重されるよう
になったそうだ。
松茸の産地として有名な長野で、松茸づくしの料理
を堪能した。松茸のお浸しから始まり、土瓶蒸しに
蒸篭蒸し、炭火焼、天ぷら、茶わん蒸しと締めの
炊き込みご飯。秋の美しさと美味しさを五感で
味わった。
