『Watermelon Milk Pudding


Ingredients

6g powder gelatin

2 tablespoons water

100cc fresh milk

100cc fresh cream

2 tablespoons sugar

60g watermelon, and a small amount for decoration

Small amount of maple syrup



1. Add water to the gelatin, and stir. Leave for about 5 minutes.

2. Puree the watermelon and separate the juice.

3. Place the milk, fresh cream and sugar in a pan and heat. Add the gelatin, but make sure no to go over 70 degrees. Add watermelon juice.

4. Wet the inside of a few small bowls, and pour the contents of the pan into them. When it has cooled, place in the refrigerator to set.
5. For decoration, cut some watermelon into small pieces and pour maple syrup over them to create a marinade.

6. Place the watermelon on top of the pudding. Add a mint leaf on top.

Watermelon has a coolong effect and is great in hot temperatures.

It is rich in natural anti-oxidants such as beta carotene (vitamin A) and lycopene, and is known to improve blood flow and revitalize your matabolism. It can also have a positive effect on the turnover of your skin, leading to happy, healthy skin.




『Chiken and Plum in Red Wine Stew』


Ingredients (serves four)

2 large pieces of chicken thigh

2 cups(400cc) Red wine (not too sweet)

10 dried plums

1 can of tomatoes(whole or diced)

1 red onion (if unavailable, can replace with normal onion)

1 carrot

1 celery

1 bundle of dried bouquet garni (if unavailable, can use 2-3 dried bay leaf)

1 teaspoon consomme

1 teaspoon sugar

A pinch of salt and pepper

1 fresh peach (can use can peaches if unavailable)


1. Use a bamboo skewer to create some holes in the skin of the chicken. Sprinkle salt and pepper and rub into the chicken.

2. Peel the skin of the red onion, carrot and celery, and dice up into medium sized pieces.

3. Pour a small amount of olive oil into a saucepan and place the chicken with the skin facing down. Once the skin becomes crispy and slightly charred, take the chicken out of the saucepan and place into a larger pot.

4. Stir fry the red onion, carrot and celery until they become soft. Make sure not to burn.

5. Add the stir fried vegetables into the pot and add red wine, plum, can of tomatoes and consomme. Place the bouquet garni on top and set the heat to low. Place the lid on the pot and simmer for 30 minutes to 1 hour.

6. Once the chicken has become soft, remove the bouquet garni. Remove the chicken and the plums from the pot and place the remaining sauce in a blender and blend till become smooth. Place everything back in the pot and reheat on low. If the sauce is too sour, add a punch of sugar.

7. Remove the chicken from the pot and cut into smaller pieces. Spread the sauce on a plate, and then place the chicken and plums on top. Add sliced peaches as a garnish.

I love this dish because it's easy to make yet very flavorful. It's a great main dish not just for the everyday, but also for house parties and special occasions. I always create other dishes such as salads and desserts in the 30 minutes to 1 hour it takess to simmer this dish, allowing me to optimize my cooking time!

Red wine contains polyphenol, a natural anti- oxidant that removes active enzymes which cause aging.


Dry plums are rich in fiber as well as minerals such as potassium, calcium and magnesium, and work to revitalize your metabolism.

『Salmon Lomi-Lomi』




Ingredients(serves four)

200-300g, Fresh Salmon

8 mini tomatoes

1 cucumber

1/2 red paprika

1/4 purple onion

1 tablespoon Olive Oil

Salt

Dill herb



1. Cut the salmon, mini tomatoes, cucumber, res paproka 1cm pieces.

2. Cut the purple onion into 1cm pieces, and place in water for 15minutes. Remove from water.

3. Place all ingredients into a bowl, add olive oil and a pinch of salt. Mix gently with hands.

4. Sprinkles some dill herb.



The story behind the recope:

Lomi-Lomi is a traditional Hawaiian dish using salmon, a known anti-aging ingredient.

This is an easy recipe that does't require any heating, and matches nicely with rice.

Salmon contains anti-aging ingredient astaxanthin. The amount of astaxanthin contained in salmon is much higher than in other fish. Red vegetables such as tomatoes and paprika contain the anti-oxidant ltycopene and are rich in Vitamin C, which leads to clear, healthy skin.

『Mimosa Salad with Tomato and Oregano』




Ingredients (serves four)

2 tomatoes

1 egg

Mozzarella cheese


<dressing>
1/2 teaspoon, dried oregano

1/2 tablespoon, balsamic vinegar

1 tablespoon, olive oil

Ground black pepper

Salt


1. Boil egg for 12 minutes(hard boil)


2. Remove egg shaell, and grate the egg against a strainer to create the "mimosa flowers"


3. Make small vertical cuts around the tomatoes' stem, and place in boiling water for 30 seconds.


4. Remove the tomatoes from boiling water, and place them in ice cold water.


5. Remove after few minutes, pl the skin off and slice.



6. Cut the mozzarella into bite sized pieces.



7. Create the dressing - mix all ingredients except for the olive oil together. Finally, add the olive oil in small amounts and mix well.



8. Pour the dressing over the tomatoes and mozzarella cheese, and add the mimosa flowers on top.


The story behind the recipe:


Mimosa flowers symbolize spring. In Italy, they are also known as flowers that symbolize love, with men often giving women a bouquet of mimosas for Valentine's day.


How this dish can make your skin happy:


The bright red color of the tomato is caused by the phytochemical lycopene which is known to be a natural antioxidant. Red vegetables are also high in Vitamin C which leads to healthy, clear skin.

Balsamic vinegar contains polypheol and citric acid which are effective in stimulating blood flow, reenergizing the body and burning fat. It is also a well known antioxifant. Olive oil contains chiorophyll, which has a detoxifying effect.

『Gazpacho』





Ingredients(serves four)

1 can of tomatoes(whole)

1 cucumber

1 red paprika

1/4 onion

1/2 clove of garlic

50cc cold water

2 tablespoons olive oil

1 tablespoon lemon juice or wine vinegar

3/4 teaspoon salt

(also, a small amount of cucumber and paprika for decoration)



1. Dice the onion and garlic into small pieces. Wrap lightly with saran wrap and heat in 600W microwave for 1 minute.


2. Slice the paprika vertically in half, amd remove the stem and seeds. Keep a small portion aside for decoration later. Dice the rest into small pieces.


3. Cut the ends off the cucumber, and similarly keep a small portion aside for decoration. Dice the rest into small pieces.


4. Let the onion and garlic cool first, and then place them in a food processor together with the paprika, cucumber, cold water, lemon juice, salt and pepper. Mix until it becomes a smooth paste.


5. Add olive oil in 2 separate goes and mix well. Add more salt if necessary.



Tips

Create this dish one day to a half day before, and keep in the refrigerator. This will allow the flavor to settle and will make the dish more delicious! If the gaspacho lacks thickness, add a small amount of bread or rice. If it becomes too sour, add a pinch of sugar.


The story behind the recipe:

Originally a dish from

the Andalusia region in Spain, gazpacho is sometimes referred to as a "liquid salad".

Since most of the ingredients are raw, the vitamins in the vegetables are retained and not lost due to heating.

This dish is not just great for summer but also for special occasions like christmas.

Japanese cooking specialist as well as Vegetable and Millet Sommelier based in Milan, Italy.


Developed a passion for food and cooking from an early stage, and intially started off her career as a graphic designer fot Toraya, a Japanese traditional confectionery brand. Turning her passion into a profession, Keiko soon began teaching at ABC Cooking Studio in Tokyo, Jpan, while simultaneously maneging the children's wing the studio, abc-kids. Established her own cooking studuo, K's kitchen, in Tokyo, after receiving training from Kikuko Panzetta's south Italian home-cooking classe La Tavola di Tata.

Opened K's kitcn Lexington in New York City, prior to relocating to Milan and opening K's kitchen Brera Milano in her home.
