The new rice season is upon us. When you think of rice dishes, you may think that they would include a bunch of Asian food ingredients. However, for this rice omelette, all you need is rice and the rest of the ingredients can consist of typical American breakfast ingredients. Today, I used bacon, but you can use chicken or seafood – anything you like. Both of my sons love this omelette. Normally, my younger one doesn’t like bell peppers, but with this recipe, he’ll eat the vegetables. This is a very simple recipe for making a rice omelette and you will never make a mistake!

Rice Omelettes
Ingredients (serves 4)
・4 cups steamed rice
・8 strips of bacon cut into small pieces
・1 red and yellow bell pepper, cored and finely chopped
・1 chopped onion
・salt and pepper to season
・¼ cup ketchup
・8 eggs
Preparation
1. Sauté bacon, bell pepper and onion until softened.
2. Add steamed rice to the pan and stir-fry together.
3. Add salt and pepper.
4. Add ketchup and mix well.
5. Set the seasoned rice aside.
6. Beat two eggs in a small bowl and add a pinch of salt, then pour the eggs into a skillet.
7. Make a round omelette.
8. Place one cup of seasoned rice in the middle of the omelette.
9. Fold top and bottom sides of the omelette over the rice.
10. Repeat steps 6-9 to make four rice omelettes.
